A maple fudge taste-test to kick-start Fall

It’s still quite warm in my corner of the Pacific Northwest, but the leaves are changing and the bright rays of summer have softened into the subdued sun of September. With both of my children back in the reliable schedule of the school year, I’m finding my ability and desire to ‘create’ is returning. To that end: I decided to try Frugal Mom-eh!'s recipe for maple fudge - a perfectly Fall flavor profile for an almost Fall day.

The recipe only calls for three ingredients: maple syrup, heavy cream, and butter. You can optionally add walnuts, but I skipped this simply due to personal preference. Making the fudge was straightforward, but does require focus to ensure the syrup doesn’t boil over as it’s coming up to temperature, so I don’t recommend starting the cooking process while your husband is waiting for you to join him on the couch for movie night. You may end up having to do what I did and refrigerate the mixture so that you can start again in the morning.

The end result is a sweet, dense fudge with a pure maple flavor (reminiscent of the small maple leaf-shaped candies you can buy at the Canadian border Duty Free). The syrup is tempered by the cream and butter additions, adding a depth to the maple sweetness. I recommend enjoying this fudge with a cozy book and a strong cup of black tea. Happy almost Fall!
